I would like to know if it's possible to transfer a mw2 patch from a jailbroken ps3 on 3.56 (CFW) to another one with an original firmware on 3.61 with "data transfer utility"..

There is no 3.56 CFW!

I am guessing you mean 3.55 CFW and yes you can transfer data

No, it doesn't. Only 3.41 & 3.55 are public atm.
