1) DEX is a debug station ps3 which doesn't sound like you need, mainly for developers. REX is both CEX(retail)/DEX(Debug) kernal which means you can switch between both firmwares but causes a lot of heat and performance issues.
2) Your choice really, 4.xx firmwares do everything 3.55 can but can play all the newest games without eboot fixes. Note: Any homebrew needs to be signed to work with 4.xx firmwares. Most apps you probably have will need to be redownloaded on for 4.xx(excluding some like MultiMan)
3) Yes you can and there are plenty of ways to, but the best is to QA Flag Toggle your ps3 before updating to 4.xx, search for how to do that.
4) Yes, no eboot fixes needed meaning no compatibility issues
