So far downgraded and updated CFW many times, so I'm used to this process, but it's the first time something like this comes up. I would appreciate any kind of help with this problem.

The model should be downgradeable, the clip is well positioned.

All 2xxx are downgradeable, but you stated in first post you had 2511A, so thats why im interested in the datecode, as that can indicate if you are even able to downgrade

Where else should I look? I can't seem to find any other number on the console.

it should be on the bottom for 2K consoles....
i seems its not there thats wierd, are there any more stickers?

BTW i checked your cech code, and it can be downgraded to 3.50.
so if you have a good backup put ps3 in flashfun mode and try to revert an old flash file

Nope, no more stickers in the entire console.

In fact, I even have other 3 PS3 here, a 2001A, 2501A, and 2011A, and neither one has a datecode. Weird. Although so far I've been downgrading a lot of 2k consoles, I've never even looked at the datecode or even checked the minimum downgradeable version, these are things I'm learning just now.

I read somewhere else that I have to patch the NOR dump or something? What do I do, put my dump on the SD, turn on the console on flash fun mode, and press the start button?

as you are on bricked mode right now,
you have to get a unpatched good backup of your NOR, you put it on flash fun and write it back, atleast try..
flash fun forces the ps3 to stay on... however if it doesnt that means you have to solder a wire
