So, how do people do that? (I can flash maybe, install rebug, but even with it, how will i go online without the annoying PS3 UPDATE screen?

Woah you are way off buddy lol. You need a 3.55 OFW or CFW PS3 to start of with in order to even modify any game. Look on Ebay or Craiglist for one but if your PS3 is a model like this:

you can downgrade it. In order to get online, yes you do need rebug and you need a pkg file called psita to get online :p.
