Full formatting will not change the version of your update. If it freezes when you're modding, its normal.

need more information,like when it freezes e.g load screens, connecting tools and freezing while modding isn't normal at all, maybe occasionally but not as you say.

Check how many degrees your ps3 is running, it might be because it's overheating.

If formatting the PS3 dosen't work, then i assume it's your hdd which is slow?..

Formatting PS3 will keep your PS3 on the firmware it were before formatting, it will just reset everything else. Your firmware, will be safe.

If you are modding and its freezing, thats normal. If your PS3 is freezing, temperature of PS3 is fine, then it will possibly be your Blu ray lenses that is causing the problem.
