You would format it from a PC or an external hard drive, You would be reset and everything on your PS3 will be removed. Even the Jailbreak. You'll have to go through the start up guide or whatever. Then i will ask you to update. Put an OFW update to your USB and then update.

Are you new or something? Formating doesn't remove the firmware, it's saved to the motherboard not the hdd. (except if you have homebrew mods installed like ccapi, webman etc.)
