I am reasonably new to modding and this may be a really stupid question but would it be possible to put the HDD of an OFW console into one running a CFW and add the game mods to the appropriate files and then put the HDD back into the OFW console and play with mods?

No it's not possible at all. The ps3 always makes you format the hdd when switching the hdd from ps3 to another ps3. Also even if you could, OFW won't let you run modded eboots,
