Most of those are up to each person, however here is my personal suggestions:
PSNinja and PSNPatch will clear the 'sys' calls which is what custom firmwares / jailbroken consoles use for common stuff. It clears them so Sony or game developers can't detect they've been modified. Both of them also clear history, of what you've done on your PlayStation 3. I would suggest Webman over both of those two, as Webman has ability to do this automatically each time you start your PlayStation 3, including spoofing console id. However, the console id has to be 'legit' to get online.
Since you are asking for CCAPI, you'll need to download ccapi.pkg on your PlayStation 3 if it's not there already. Then install the installer on your computer. There are plenty of tutorials to guide you on this, if you do some more research. - Cough,

When your PlayStation 3 is jailbroken, you'll be able to get 'any' games for free as long as you find the download for them. Most people download games through Torrents (ThePirateBay). You'll have to download all the games and maps you need, if you do not want to add your 'main' account to your PlayStation 3 and download it from there.
I would suggest to have two different accounts, as I got my self my main account banned which I had for over 5 years

For mod menus for GTA, you'll have to look for the latest update. There is two things to note:
- Make sure that the GTA 5 Update fits the one mod menu you are downloading.
- SPRX Mod Menus only work for DEX.
- Update.rpf, Script.rpf, scripts will work for CEX & DEX.
In my opinion you should swap to DEX, which is quiet easy on 4.70+ REX (Rebug).
And as of mod menus, I think you should look into Serendipity. This menu costs $15.00, but has everything you need. That also includes install support, even through Team Viewer if necessary (!). You can read more about this mod menu
