4.78.3 isn't even out yet. use webman to set ur fans, but it doesn't seem like ur ps3 is getting hot to where itll freeze. one of my ps3's does the exact same thing. itll be 30c with the top shell off, fans running 70%, and itll still somehow manage to freeze. if u don't have another ps3, then youll have to replace that one

Go into safe mode, downgrade to a lower fw, because this fw is clearing the problem causing your problems.
