(upgraded hdd of course) Just wondering if someone can point me to a good tutorial for jailbreaking this dinosaur. I've done it in the past, but it seems with OFW 4.76 I'm going to need to get into the hardware a bit, and was hoping to avoid sifting through a pile of threads all relating to newer models. Any point in the right direction would be appreciated.

if u r on any ofw higher than 3.55 you have to downgrade it with an e3 flasher to get low enough to jailbreak it

The same thing. If you console is currently on a firmware higher than 3.55, then you need a hardware flasher to downgrade.

Which flasher will depend on what flash memory model your ps3 uses and if it was manufactured with 3.55 or lower.
