Downgrading doesn't work, as you can't restore the iPod due to Apple stopping the signing of older iOS'.

No, it's not possible as you need the iPod to be jailbroken itself, I'm not sure if the team is working on another jailbreak.

If I jailbroke the iPod, would that work?

No, because it only works for iPod Tough 1G and iPhone 3G + the other JBdongles.

I've seen on YT that it can be done on a 2G model.

Oh maybe, I was looking on a website that showed all possible jb devices and it didn't say 2g.
