All you have to do to go back to the official firmware is download the official firmware of the version you're on or higher and update over the CFW.

Tutorial:
1) Download the official firmware you want for starters.

2)If the firmware isn't already called PS3UPDAT.PUP rename it to that.

3) On the USB drive you'll be using on the root of the usb( Not already in any folders) create a folder PS3.

4) In the PS3 folder on usb create a folder UPDATE.

5) Copy the PS3UPDAT.PUP file into the update folder.

6) Put your usb into PS3 then go to system update -> update via storage media, then just install it and your back on official firmware!

The reason I posted this is that I get HEAPS of private messages about this and other stuff about CFW and all that.. I have about 50 just about this so yeah...

You cannot downgrade from using this, for example you can't go from a 3.55 CFW and install a 3.41 official firmware

I had same problem, what you need to do is, Start your ps3 up in safe / recovery mode before you insert usb containing official 3.55 fw and choose system update from the menu shown (not xmb) and follow on screen instructions.

Worked for me

Safe mode =
Hold finger on ps3 on button, don't let go. Ps3 will beep and a couple of seconds later switch off.
Take finger off the on button
Press and hold on button again, Ps3 will beep, then will beep twice, now take finger off

You should see a black screen with a simple menu of about 5 or six options listed.
