Of Course you can, Install Blu-Ray movies no, because 3.55 uses SysCall's to prevent the use of them. When you jailbreak it's just going to enable it to use Third Party Applications. You still have full functionality of your PS3.

1. If you mean restore OFW of course you can, it's not going to brick your PS3 at all. And your Installed Packages will be with you on OFW to.

2. Nope, all you have to do is follow the part on which he jailbreaks it (PS3 Side).
