Im not too good on this but i was having the same problem and it took me a while to get it as well
Firstly, at the moment you need to have the disc of the game you want to play... There is a Backup to .PKG program being made at the moment but as of now you will need the disc.
You then need to check to see if somebody has modded the eboot for the game you want to copy...
This is useful for finding the eboots or .PKG patches....

If the game is not on there try searching about a bit because there are already a lot of game available
Once you have that sorted, assuming you already have GeoHotz custom firmware you must install open manager 2.pkg....

Put it onto a USB pen drive and install using the install package application in the custom firmware. Now open up the open manager app and you will be asked if it is okay to save files in HDD0, just accept and continue... Once it is running you will see the title and picture for the game disc you have in the PS3. Press the button to copy and let it do its thing. Some games are pretty large but i know that NFS:HP was around 6-7GB and GT5 is around 11GB so it may take a little while.
By this point i assume you have an FTP server installed? Here is one if you do not...

Open it up and open up FileZilla on your computer...
To set up FileZilla, at the top:
Use the IP address shown on the PS3 in the FTP server.
The username is: ftpd12345
The port number is 21
Click QuickConnect
In the left column find the directory you saved the eBoot.bin into
In the right column find the directory for HDD0\GAMEZ\*BLES or BLUS for disc*\USRDIR
Right click on the eboot.bin from the left and press upload. Now close everything down and it should be done. Launch the game from the Game tab on the XMB...
For some games instead of an eboot.bin you will download a .PKG file, in this case you must run the .PKG file and then copy the USRDIR files from the GAMEZ directory into the HDD0\game\*BLUS or BLES for disc*\USRDIR, apart from the eboot.bin
*Sorry if this is not completely accurate because i am writing it from memory*
Edit: Backups can now be saved as .PKGs so you will soon be able to download the Backups and there will be no need for a disc.
