does it allow Sony to see my PS3 files, etc?

Im hearing things like, if i update to 3.56 without going from CFW to OFW, you'll get banned. Is this true?

The 3.56 update basically kills your homebrew but only for just now, so if you dont want psn access dont update yet but if you do you can use the psn bypass to get online, edit your internet settings and when you get to dns settings click manual and put in 67.202.81.137 as your primary dns and then save and sign into psn still on 3.55
