Should i update my ps3 to 3.60?
Or can i down grade to 3.55 and jailbreak my ps3?

So its better to go to 3.60 and leave my 3.56 ?

It's up to you, if you want to play online for the time being then yes, update.

But if you want a CFW then don't update because there's a 3.56 CFW soon, but you won't be able to play online (unless you have 2 or more PS3s).
So it is down to patience.
