First you need a CFW 
(jailbreak) if you are above 3.55 OFW (non-jailbreak Firmware) you need to downgrade your ps3 using an e3 flasher or nand flasher.
No other way to downgrade!!! 
Next once jailbroken you can use the CFW of your chose and then mod by RTM tool or a update mod... idk if they still are using those havent modded GTA V in a while.:p

Hi i have had a jailbroken ps3 for almost a year and its awesome i suggest Dex and Rebug I've used ita didnt reallylike it. And so u dont get banned use anti eboots idk if they have for all games or you can one lol. I had my ps3 downgrade via E3 flasher and diesnt wipe your data so your good there, but very careful on validating your dumps tried to downgrade my friends ps3 and now its bricked. :/ so ya be careful and i say its worth it.
