Not possible.
Even with a jailbroken system, there is not way of avoiding the time stamp.
The only scenario is to have a timestamp generator which gives random timestamps.
But there is no way of having trophies logged without the timestamp.

Yes there is a way... Buy a new PS3 and use it offline... My friends first trophies dont have timestamp 'cos he didn't have internet connection... So if PS3 is NEVER plugged (internet virgin) you have trophies without timestamp... When you connect, there will be a timestamp...

Edit: Oh and you cant update your FW or get any patches... Example Alone in the dark had trophy patch... without it, no trophies... And by new PS3 i meant slim version...

I thought that too,but what if the PS3's internal battery was removed prior to playing a game or has that been tried without success?

I've seen some profiles on psnprofiles.com with trophies without timestamps, not sure if this is a bug of the site or what you're looking for... but I don't know how to do it :|

I have never heard of anybody trying it with success.
I think that the system resets if the internal battery is removed... and the unique system ID is wiped.
I might be mistake here, but I had read that the internal battery is not a serviceable item because of this.

Probably a bug...
Trophies are recorded in system... so the second they pop the users PS3 records the time and date when it happened.
The of course the trophies are loaded to the server side as soon as the user syncs his system.

'leap year bug' on the fat ps3's back in March 2010.(which worked and i was too impatient for Sony to fix it)Smile
