So yeah, pretty straight forward question. Anything able to change trophies from no timestamps to a timestamp? I'm not actually looking to cheat just want to add a timestamp for something I earned. Thx

Once a completed trophy is synced, there's no way to replace its stamp, but you can try to delete your save (back it up), set your PS3 to an earlier date and then try to reearn the trophy while offline. I say this, because when trophy hacking, trophies with earlier timestamps take precedence and replace the old timestamps.
