Skinning the animals in the game takes quite a few seconds, especially if you are hunting larger animals. This trick can be very useful because it allows you to bypass the actual animal skinning animation.

1- Kill any animal
2- Mount your horse or you can kill the animal from the horse
3- Find the animal you just killed
4- Place the horse on top of the animal or have the horses front two legs on the animal in some way/ make sure animal is underneath and just to the left of the horses so when you dismount you will be on top or next to the horse and the animal you want to skin
5- Dismount horse
6- On Xbox, immediately press Y to skin or triangle on PS3.
7- Press Y to mount horse

The skinning animation is skipped and you immediately remount your horse with the skinned animal and/or meat. This will take 1 second literally instead of the normal skinning animation, which on larger animals is about 10-12 seconds long.

If you practice, you will eventually be able to shoot an animal or a couple of them, ride full speed up to the animal, skid into place, skin the animal and be gone.... all in a matter of a few seconds.

Sometimes I skip the animation by accident, I think it's because the animal is near a wall or something. I'll try this out later, it can be quite annoying when you're trying to skin a bunch of animals, so this would be helpful.
