Yeah if you wander around with stealth boy on (crouching) that should keep you away from the Nightkins. I did it but I had quite a high sneak skill. Anyway, if you accept the ghouls challenge then sneak up on him after and try and get a head shot using the V.A.T's system then it should be a one shot kill. Watch out for is traps as well.
