I managed to mod my
• Level and Stats.
The max level for the game, is 838, if all your stats are at 99.
But I can't find the direct value for the Stamina in this one. All the codes you need for stats, are at the very top, once you open Advanced Mode, on a newly started character.

Anything you see that is 63, are stats.
Also, note, that modding your HP to insane numbers, will not work. I tried.
You can also do item swapping, it does work. I managed to edit my Stone Ring to a Chloranthy Ring+2.

REMEMBER. YOU MUST REVERSE THE ITEM ID, when you're searching for it, and replacing it.
So, for example -
A Dagger - 000F4240
You want to search a hex value of 4042F400. And let's say, you wanna replace it, with the Moonlight Greatsword -
Moonlight Greatsword - 001C8C98
Replace 4042F400 with 988C1C00

Yes, you can grant yourself the covenant rewards via item swapping and also increase trade-in items to 99 as long as you only have one.
It is entirely possible to platinum the game this way, any and all spells can be gotten via item swapping and all you need to do for them to register is to just maybe switch them back and forth between your inventory and item box.
For example item swap something for a sunlight medal in advanced mode. After it's done with the modifications go into quick mode and apply the 99 Sun medal code. When you start up the game you will have 99 Sun Medals.
If you want a a covenant item that can't be skilled up via tokens(i.e. the PVP ones that require kills) you can just item swap another item for the item you want.
