I could probably experiment with Platinum Save that you know you had 500 mobs for the trophy unlocked.

Sorry to hear. I have the game on my ps4, but not started with it yet. I will let you know, if I am about before the amount of Monsters, maybe at 490ish.
Is there counting in the stats to see?

oh wouldn't that be nice if there was a counter, right? First I dismantled over 1000 mobs (counted 700+), then made vanilla save and started again. Killed 497 + 20. Trophy never popped. So that's it for me.
