You need to buy Save Wizard. After you can resign the Saves to your profile.

Only way to get that trophy is to actually do it under 60 seconds. Probably the save is just before the beginning of the segment.
Turn around to get the doll and examine the back to get the piece. Turn around again and try to solve the puzzle to get the scissors and then go to the right wall and use the scissors on the tape and get through the the hole in the wall. that's where the trophy pops if it's under 60 seconds.
Remember that the puzzle is random per save. So if you can't do it the first time, remember the combination used and reload from main menu as the puzzle stays the same.

Probably not because the data for this mode is stored in another "save file" than the Leon/Claire Campaign and System file. Also during this mode there is no way to save so it is unlikely doable to change any variable on that file.
Oh and it's not supported by SW.

The "system file extra" is not supported.
SW supports the type of save file. This game has more different saves to track everything you do in the game. Campaign files and system data are supported by SW
