After mini cut scene at shooting range, manny will challenge you for shootout.Do not talk to him yet and instead go straight to the room in front and turn left.
You will find the 5th coin in the cupboard.

SHARPSHOOTER
Backtrack and talk to manny and complete the shooting challenge for sharpshooter trophy.
