For "Legends Never Die" Load up "Championship" and WIN the final race, it's set to very easy so it shouldn't be too much of a challenge.

I haven't tested the platinum save to see what trophies you can earn from it. Maybe for the challenge trophies you could complete 1 challenge to unlock the trophy? Let me know how it goes. Awesome face
