I have a PS3 Super Slim so no Jailbreak but apparently Im seeing all these Non-JB Mod menus I can use.

So, im wondering. What can I not do if I dont have JB? Almost all of these Mod Menus work online and I can even force-host (I think I saw that) so I have full power.

What am i missing out if I cant JB?

You can use all CFG menu's. But to use Mod menu patch's you need CFW

What are examples of "Mod Menu" patches that are different from CFG Menus
