how do i change a 1.12 patch for a 1.11 patch?....

If you mean converting 1.12 to 1.11 OR vice versa, then you can't... the modifications done to 1.11 and 1.12 are different from each other.

FTP into your CFW PS3. Using your file manager, navigate to /dev_hdd0/game/BLUS30377/USRDIR Delete default_mp.self Copy your 1.11 patch_mp.ff over the existing patch. Exit and perform your data transfer.

Don't have CFW? No 1.11 patch for you.
