Because the companies pack a slightly better processor and twice the RAM and get you suckers to buy it :p.
Upgrading RAM is also painfully easy.
RAM and how much they actually help are determined by if they are DDR, DDR2 or DDR3,
DDR is at about 100-500 MBP/S, DDR2 goes up to about 800 MBPS, DDR3 can go up to 1.86 MBP/S.
This is vital to a computer because it can load textures and so on onto them, this is utilized by video games, sadly most games are 32 bit and don't use passed 2, 4 is the dead maximum but for a long time having 2 GB was high end.
You also have a cache on your processor, that is simular to your RAM but only for your processor and is much smaller.
Anyways, point being, majority of the people here won't actually use all the RAM they have like when they get 8 and only browse the internet, unless they browse with 300 tabs open (
pr0nz) and enjoy video editing while playing call off duty at the same time and that still wouldn't use it all.
DDR2 to 3 and soon to 4 doesn't do much though because of latency problems and because programs don't utilize RAM to the best of their capabilities, mainly because people still rock a rig with half a gig of DDR.
