GTX 970 SLI not needed for 1080p. A single GTX 970 can max 99% of today's games at 1080p with a stable 60FPS. If OP plans on getting 1440p+ in the future, I would recommend GTX 980 instead due to GTX 970's VRAM issue. At 1080p, the VRAM issue won't cause any problems, but at higher resolutions, I wouldn't recommend the GTX 970.

I guess it's just personal preference for me to rather have a 5820K over a 4790K.

I understand that 970 has vram issues and thsts why I usually say go with 290s or 290x they are just as fast and cheaper. i understand you dont need two. But i think hid budget is above 1080p and why not get the fastest and best pcpossible. If two is possible then go for it. X99 is only beneficial for gaming due to raw cpu power and the extra pci bandwidth that could slow down a 3 and 4 card setup.

Pretty sure it was proven in alot of benchmarks that that last block of vram didn't really do much in terms of performance till you were hitting 4K resolutions and maxing the game out completely. In which case pretty much any card on the market doesn't perform all that hot. Main reason was is because most games just don't use that much memory. Once DX12 rolls around, it shouldn't be an issue anyways.
