I changed the folder from games to game and it stopped showing my games I'm getting really frustrated and just wanna give I'm at work right now when I get home I'll post a picture of the how I have it setup I rely wanna figure this out...

No. This is a common misconception. The PS3 FW is stored on the Flash , NOT THE HDD. IF You do Replace it though, at startup it'll ask you to install Your FW, install the One you were on Before you replaced the HDD.
