As long as you don't select update system through internet or install an OFW(official firmware), you'll be fine.
If you are installing a firmware that is lower than the one you are currently on, you will need to install a downgrader cfw first and then a cfw of your choice.

If your target type(shown in rebug toolbox/system information) is DEX, install only DEX firmwares. If your target type is CEX, install only CEX firmwares.
To install a firmware:
1. Download your cfw
2. Rename the file to "PS3UPDAT.PUP" (no quotes)
3. On a fat32 formatted flash drive, create a folder named "PS3"
4. Inside the "PS3" folder, create a folder named "UPDATE"
5. Inside the "UPDATE" folder, place the "PS3UPDAT.PUP"
6. Insert the usb flash drive into the right most usb port of the ps3
7. On the xmb, go to the top of the second column from the left, and select Update System
8. Select from storage device
9. Select the cfw on your usb flash drive
10. Follow prompt and install
Next reboot should be the cfw you installed
