Yes, exactly, Souls. In this one, you level up at the "Fire Keeper", which is a NPC you find in a place called the "Firelink Shrine", an area you come to a little ways past the first boss. There are a few people there at the beginning of the game and she is one of them. Speak to her and she will use your souls to level up. Every time you die, you lose all the souls you have on you and go back to the last "bonfire" you rested at, although you will not lose any levels, stats, game progress or anything in your inventory. If you run back to the spot you were at a few seconds before you died, you will see a bloodstain on the ground and if you touch that before you die a second time, you will get ALL of those lost souls back, but if you do die a second time all of those souls are gone forever.
Again, unless you are using saves to pop all trophies, you don't want to level all the way to 99. One particular item you need to get for a particular trophy, the Londor Braille Divine Tome which will allow you to get a few miracles for the "Master of Miracles" trophy, either use a save for that trophy, or make sure you don't go past level 89 or so. There's a quest line where you need to have an NPC named Yoel grant you 5 levels in one playthrough before you can get that Tome. If you're already at level 95 or higher, then you won't be able to get all 5 levels since 99 is the max. If you're at 89 then you have room for things going wrong in one playthrough. Or you can use a save, assuming we have at least one somewhere around here - it would be one of the very last trophies you get if not the last.
