Saves:
Save Slot 1:
Play Fetch - Take Securicar from Staunton Island Garage to Portland docks
Where To? - Jump in a taxi and complete 1 fare (Trophy should pop)
Save Slot 3 NEW
Note: This save is not fully completed it's been played up until you unlock SSV. FBI/Securicar in Staunton Safehouse Garage!!
Man Toyz (Complete every RC Toyz mission) - SSV RC Mission behind Safehouse
Blood in the Streets (Pass all 20 rampages) - Garage roof down the hill from SSV Safehouse to the left
Where we're going, we don't need roads (Patriot Playground, A Ride in the Park, Multi-Story Mayhem, Gripped!) - Completed Gripped down from SSV Safehouse
Wheels Up (Complete 20 unique jumps) - Last jump is Staunton Island Car park (Land in bushes to left so trophy pops)
Save Slot 5:
Pest Control - Deliver FBI car inside Portland Island Garage to the docks (trophy will pop)
Save Slot 8:
Repeat Offender - Get busted 1 more time for trophy to pop
If You Ain't Cheating', You Ain't Tryin' - Blow up 1 more car for trophy to pop
Right-hand Man - Get inside a vehicle (or do 1 level of Vigilante)
Like a Boss - Get inside a vehicle (or do 1 level of Vigilante)

Hey I think I have forgot the RC Mission at the Casino on Staunton Island. I'm not able to check my save on PS4 at the moment. If you can check the stats it should list which RC missions have been completed.
If I have missed Casino Calamity I will update OP

I think you should be able to check the stats in the game to see things such as how many stunt jumps have been completed, how many rampages, etc. If you're not seeing them but the game says there's 1 left (or any left at all) you might just be looking in the wrong place. And yes, there are plenty of parking garages around the map, many of them with a stunt jump attached to them. If you're sure it's the right one, and the stats say there's 1 left to complete, stunt jumps can be so finicky that I'd make sure you're using one of the fastest cars (forget their names but you can usually find one at the car dealership on the easternmost island, near the northwestern corner), and that you're hitting it head on and landing in the right spot (the grass, according to the instructions).
